Being in the kitchen trying out new things is often exciting and really delicious.

We thought we'd ask Alison from Slimming World Navan to recommend some dishes for us to try. As you'll obviously realise the dishes that she creates are both nutritious and they form part of a lifestyle aimed at staying healthy.

'Tarragon Chicken'

Cooking time: 30 minutes

Ingredients: Serves 4 Portions


    • 4 skinless and boneless chicken breasts
    • 250g chestnut mushrooms (works well with wild mushrooms mix or porcini)
    • 10 shallots
    • 2 garlic cloves
    • Low calorie cooking spray
    • 150g green beans
    • 3 tbls of fresh tarragon leaves (2 tsp of dried will do)
    • 200mls hot chicken stock
    • 3 tbls fat free natural fromage frais
    • 1/2 lemon


Method


    1. Slice the chicken breasts into 3 slices each. Peel and cut shallots in half length ways.
    2. Add low calorie cooking spray to a pan. And fry chicken and shallots for 10 minutes, turning and cooked until golden.
    3. Remove from the pan and set aside.
    4. Spray the pan with low calorie cooking spray again and fry the mushrooms for 5 minutes, add the garlic cloves, thinly sliced.
    5. Return the chicken and shallots to the pan with the tarragon and simmer for 10 minutes, until cooked through.
    6. Added the green beans to a pot of hot water and boil until tender.
    7. Remove the chicken from the heat, stir in fat free fromage frais and squeeze the lemon in. Gentle stir.
    8. Serve with green beans and veg of choice.
