We thought we'd ask Alison from Slimming World Navan to recommend a dish for us to try. As you'll obviously realise the dishes that she creates are both nutritious and form part of a lifestyle aimed at staying slim.

Ingredients: Serves 4 Portions

- Low calorie spray
- 1 onion, peeled and finely chopped
- 6 cardamom pods
- 2 red chillies, finely chopped
- 2cm piece of root ginger, peeled and finely chopped/grated
- 2 garlic cloves, crushed
- 1 tbsp madras curry powder
- 450g lean beef strips, fat removed
- 2 tsp ground coriander
- 1 tsp ground cumin
- 500 mls beef stock
- Salt and pepper
- 400g can chopped tomatoes
- 4 tbsp fat free natural yogurt
- 2 ripe tomatoes, cut into wedges
- Fresh coriander, to serve
Method
Method
- Spray saucepan with spray oil and add onion, cardamom pods, cook for 3-4 minutes until the onion is softening. Stir in fresh chillies, ginger and garlic and cook while stirring for 2 minutes.
- Add curry powder and beef to the pan and cook for 2-3 minutes until the beef is browned. Add the ground coriander, cumin and stock and bring to the boil. Season and cover for 1 1/2 hours. Stir occasionally.
- Cardamom pods should have risen to the top, so remove.
- Add the canned tomatoes and heat gently.
- To serve, spoon into shallow bowls, drizzle with yogurt, scatter over tomato wedges and fresh coriander.
