We're really interested in cooking and love being in the kitchen trying out new things.
We thought we'd ask Alison from Slimming World Navan to recommend a dish for us to try. As you'll obviously realise the dishes that she creates are both nutritious and form part of a lifestyle aimed at staying slim.

Lemony Pork is a delicious dish and excellent during late Autumn to Late Winter when Irish grown Butternut Squash is fresh in season and can be bought locally at its lowest price.

Ingredients: Serves 4 Portions

- 400g new potatoes, thinly sliced
- 1/2 butternut squash, peeled, deseeded and cut into bite sized pieces
- Salt and black pepper
- Low calorie cooking spray
- 1 unwaxed lemon, cut into wedges with a little zest for garnish
- 1 red onion, cut into thin wedges
- 1 fennel bulb, thinly sliced
- 4 sprigs of fresh thyme
- 4 Pork medallions- all visible fat removed
- 150mls of hot boiling chicken stock

- Preheat oven to 220c/200c fan or gas mark 7
- Add potatoes and squash into a large, shallow roasting dish, season and spray with the low calorie cooking spray oil.
- Add the lemon wedges randomly and cook for 10 minutes.
- Add fennel, onion and thyme, season again and pop back into the oven for 10 minutes.
- Meanwhile, add low calorie cooking spray to a pan on medium heat, fry pork medallions for 2-3 minutes on either side.
- Remove veg from oven and lay pork on the top, pour over the hot stock and return to the oven for 6-8 minutes or until the pork is cooked through and veg is tender.
- Garnish with lemon zest.
